Herbed Chicken
2 Tbsp butter
2 Tbsp olive oil
1/4 cup finely chopped onion
1/4 cup fresh lemon juice
2 Tbsp Worcestershire sauce
1 1/2 tsp fresh basil, chopped
1/4 tsp fresh oregano
2 large cloves, finely chopped
2 1/2 - 3 lbs fryer chicken, cut up
Heat butter and oil in rectangular pan, 13 X 9 in a preheated 375 degree
oven. Stir in remaining ingredients except chicken. Place chicken--skin
sided up-- coating it with the herbs. Bake uncovered for 30 mins. Turn the
chicken and continue to bake for 35 mins.
